Creamy Red Pepper Polenta
- 6 cups boiling water
- 2 cups yellow cornmeal
- 1 small red bell pepper, finely chopped
- ¼ cup (½ stick) butter, melted
- 2 teaspoons salt
- ¼ teaspoon paprika, plus additional for garnish
- ⅛ teaspoon ground red pepper
- ⅛ teaspoon ground cumin
- Red bell pepper strips (optional)
- Combine water, corn meal, chopped bell pepper, butter, salt, / teaspoon paprika, ground red pepper and cumin in slow cooker, stir to blend.
- Cover, cook on LOW 3 to 4 hours or on HIGH 1 to 2 hours. Garnish with additional paprika and bell
