Rava Kesari
- Ingredients:
- 3 tbsp clarified butter
- 12 cashew nuts
- 10 raisins (optional)
- 2 tbsp cooking oil
- 1 c semolina
- 2 c water
- ½ tsp powdered saffron
- Pinch of salt (optional)
- 1 c sugar
- ½ tsp cardamom powder
- Add cashews and raisins; roast until golden brown. Transfer to a bowl and set aside.
- To the same pan, add oil.
- Roast semolina until light golden brown and fragrant (2-3 minutes on medium heat).
- Transfer roasted semolina to a bowl and set aside.
- Add the remaining clarified butter and stir for another 1-2 minutes or until the mixture starts to leave the sides of the pan.
- Add cardamom powder, roasted cashews and raisins; mix well.
- Serve warm.
