  1. Remove excess fat and skin from pork
  2. Rub sugar and salt into pork. Wrap amd fridge pork for 12 hours
  3. Preheat oven to 300
  4. Wipe mixture off skin
  5. Roast 6 hours, basting hourly
  6. Take out, coat in brown sugar and salt
  7. Jack up oven to 500, bake 15 minutes to develop crust
