  1. Keep warm: 76 degrees
  2. Mix yeast mixture together to 115°
  3. Add yeast. Cover with plastic. Sit 90 minutes
  4. Whisk butter, sugar eggs into bowl
  5. Add 8 C flour with paddle
  6. Add 4 C flour with dough hook
  7. Check elasticity
  8. Divide in half, put in bowls. Let sit 90 minutes
  9. Roll out, cut into 2x4 rectangles with pizza cutter
  10. Add 1 cup filling to each, pinch opposite corners
  11. Bake at 325° for 30ish minutes
  12. Brush with butter
