Spiced Shortbread Cookies
- 1.5 cups unsalted butter, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 0.5 tsp salt
- 1 Tbsp ground cinnamon
- 1.5 tsp ground ginger
- ¾ tsp ground cloves
- In the bowl of a stand mixer, mix together butter and sugar until just combined. Mix in the vanilla. Mix together flour, salt and spices. With the stand mixer on low, add the flour mixture to the butter mixture,
- mixing until the dough starts to form. Roll the dough into two 8-inch logs and freeze.
- Baking the cookies:
- Preheat oven to 375 F. Unwrap the dough and cut it into /‘z inch rounds.
- Bake for 15 to 18 minutes, until the edges begin to brown. Makes about 3 1/2 dozen cookies.
